ALAIN VERZEROLI
Alain Verzeroli was born in Vietnam and raised in Paris. After working at Arpège and in other renowned Michelin-starred restaurants in Paris, he became Executive Chef at Petrus in Hong Kong. He then honed his craft alongside Joël Robuchon in Tokyo, where he was awarded three Michelin stars for eleven consecutive years. As Culinary Director of the Bastion Collection, Verzeroli is now responsible for the seasonal, vegetable-focused French menus of Le Jardinier in New York and numerous other restaurant concepts in New York, Miami, Houston, and Geneva. He splits his time between New York and Paris.
Maison Ë What’s your favorite way to start the day in the city?
Alain Verzeroli I’m a big fan of Ralph’s on Madison & 72nd Street and I particularly like going early in the morning when it’s less busy. Their blueberry muffin and a latte are my go-to.
M.Ë Which places are at the top of your list for celebratory occasions or a special night out?
A.V. I love Le Coucou or Atomix for a celebration. Le Coucou has a wonderful, sophisticated atmosphere and offers delightful yet approachable French cuisine. Atomix continues to be a standout thanks to Chef Junghyun and Ellia Park. It reminds me of the restaurants I used to frequent when I lived in Japan.
M.Ë Do you have recommendations for excellent desserts?
A.V. Lysée NYC from Chef Eunji Lee is a pastry shop in the Flatiron District. The pastries showcase such delicacy and technique.
M.Ë When you have visitors from out of town, what culinary experiences do you make sure they don’t miss out on?
A.V. I always choose places that truly capture and represent New York’s vibrant energy, unique vibe, and iconic culinary specialties. For instance, enjoying a pastrami sandwich at Katz’s Deli alongside a bowl of matzo ball soup is a quintessential experience. Alternatively, grabbing a pizza slice in SoHo and finishing with a cupcake from Magnolia Bakery in the West Village on Bleecker Street makes for a classic NYC outing. And for a chic venue, a burger at The Polo Bar is always a guaranteed recipe for a fantastic evening.
M.Ë What late-night eats do you crave the most?
A.V. A slice of pizza or any classic NY Deli for a Caesar salad.
M.Ë Can you think of a place to eat or drink or a neighborhood that is still under the radar and deserves attention?
A.V. I discovered a laid-back, cash only spot called Viand at 673 Madison Ave. They make the best turkey salad and sandwiches, with your choice of white or dark meat.
